I like taking pictures of food I cook/eat. I sometimes draw, paint and craft things for people I love. I live with a man who just so happens to be the love of my life, so it's pretty convenient.
My current priorities are to be healthy, save money for a bigger home and get back to creating things.
Catching Elephant is a theme by Andy Taylor
Turkey breast cutlet, spinach, roma tomato, part-skim shredded mozzarella cheese, salt-free (Mrs. Dash) tomato basil garlic seasoning, black pepper
For a quick 150cal-ish first dinner…
Nearly Vegan Burger
Boca original vegan patty, whole wheat bread, Veggie Slices soy-based American cheese (not vegan), avocado, grilled onion, spinach, black pepper
I had every intention to walk across the street to buy myself an artery-clogging monster burger and/or chili cheese fries, but a conversation with my friend changed all that. So I begrudgingly got out all of the ingredients and started slicing, grilling, toasting. And I’m happy I did because that was absolutely delicious! Now, to await the return of my boys. This lady is lonely.
Zucchicken w/ Brown Rice
Lightly-breaded chicken strips: Chicken breast, Italian bread crumbs, garlic powder, black pepper, olive oil - baked for 8-10 min at 350°.
Pan grilled zucchini: Zucchini, garlic powder, black pepper, cooking spray
Yummy, healthy, simple and satisfying.
Shrimp & Spinach Fried Rice
Shrimp, spinach, egg, brown rice, garlic powder, black pepper, cooking spray
Time to start cooking simple & healthy meals again to save up for our New Mexico road trip next month. Planning to stop by the Grand Canyon too! (I’ve never been!) We’ll be spending at least $350 on gas alone, which is a scary thought, but I’m VERY excited :)
His & Her Sweet Breakfast Buns
King’s Hawaiian honey wheat rolls, MorningStar Farms garden veggie patties, Veggie Slices soy-based cheese, avocado, spinach, black pepper
SO yummy and no cooking necessary!
I’ll always be madly in love with MorningStar’s veggie patties. They’re perfect. Plus, they can’t hurt your feelings!
PS: My puppy has worms :( :( :( I saw one in his doodoo last night and almost cried. His daddy should be taking him to the vet today, HOPEFULLY.
Veggie Croquette Salad
Vegetable croquette (purchased from Japanese market), organic spinach mix, sesame dressing, sriracha
Power lunch before a weekend in San Diego.
Bronson’s about to meet his aunt & uncle!
Mini Cheese Ravioli Salad w/ lemon herb dressing & sliced almonds
Sided w/ green olive & herb focaccia
This one was a winner, for sure.
Thank you, Fresh ‘N Easy.
Triple Pepper Chicken
Chicken breast, black pepper cooking sauce, yellow pepper, red pepper, white onion, mushrooms, leftover fried rice, organic spinach blend, sesame dressing
Had a strong urge to cook today, despite the awful just-kill-me-now weather. Nevertheless, I braved the heat for groceries and made myself & my man a fine ass meal. Besides that & laundry, it’s been a tremendously lazy Saturday.
Because Bronson is still a baby, we can’t leave him home alone just yet. So being the best parents in the whole entire world, my boyfriend and I took him to a dive bar last night to celebrate our friend Eric’s birthday. To be fair, we left him in the car with the windows opened a smidge. And because he’d just gotten his first DAPP vaccination, he was drowsy as heck and slept the entire time. I checked on him at least 7 times, and we left a bit early. Then he threw up on the ride home like the champion he is.
